Last week, I told you about my experience cutting a mango, and today I am going to share with you a quick, tasty recipe using your mangoes!

Mango Salsa

1 Mango, cubed
1-14 oz can diced tomatoes
2 TBSP Salsa seasoning

How to?

1. Cut your mango into cubes.

2. Cut the cubes off the skin and put them in a dish (pick one that has a lid!)

3. Add the can of tomatoes–I don’t drain mine because I like juicy salsa.

4. Mix the tomatoes and mango together, adding in the Salsa Seasoning (huge fan of Tastefully Simple).

5. Cover the mixture and let it “marinate” together for 2-2 1/2 hours. You will not be disappointed.

Mr. Burgher suggests putting the salsa on chips or chicken tacos, but thinks it would be excellent on a grilled chicken breast too. (Sounds like we have a menu item to add to our meal planning!!!)
